Yuri, which nutrition is most useful for winter?

The best way for one not to get confused if one has no knowledge in Ayurveda is to trust the vegetables and fruits that come with the autumn-winter season. Cabbage crops are now out - cauliflower, cabbage, Brussels sprouts, broccoli. There are also black, white turnips. All of them have a warming effect on the body and are suitable for winter weather. Pumpkins are also warming.

Of the root crops, beets have such an effect. In autumn, it is very pleasant when the nuts are collected - walnuts, hazelnuts, almonds. They also have a warming effect. With the proviso that the almonds must be unbleached to have a warming effect. We must pay attention to the fact that during the cold months we start eating fattier foods. They strain the liver. Such a product as pumpkin supports the work of the liver. It is very pleasant for the gall and liver. That's why pumpkin comes in handy this season, whether it's roasted, boiled or mashed. It should be eaten often.

How to prepare it?

I can tell you a recipe for pumpkin ginger soup that is delicious and suitable for this season. You need 700 g of pumpkin, no matter what kind, 300 g of potatoes, 1 tbsp. lemon juice, 1 clove of garlic. Spices are 1 and 1/2 tsp. fresh ginger, finely chopped. Maybe 2 teaspoons if we want it to have a more warming effect and to act more favorably in case of a cold. Grind into powder 1 tsp. coriander, 10 black peppercorns, 1 bay leaf and 1/4 tsp. grated nutmeg. Cut the potatoes into 2 cm cubes, and the pumpkin into 3 cm cubes. Add 1.2 liters of water, which must be boiled. Pour the vegetables and spices without the nutmeg into it. Boil the soup over medium heat for about 12-13 minutes. Add salt, boil for another 2 minutes. Then remove the bay leaf and puree the soup as smooth as possible. More hot water can be added. Since we have a cream soup and we need to add cream, for the winter version I recommend using sour cream. It's warming up. We can add 100-200 years from it.

Which food to avoid during the cold months?

Yogurt should be avoided in winter. If used, it should be a small 150 ml glass of ayran. Yogurt, especially when eaten directly, increases mucus and secretions. This is a prerequisite for catching a cold. It also cools too much.

Should we cut back on salads?

Salads should be reduced because they also have a cooling effect.

What salads should we eat and at what time of day?

Evening is not a good time for salads. They are best eaten at lunch. Salads can be beets, carrots, turnips. I really like the beetroot one. I put 3 whole heads, as long as they are not too big, in hot water and boil them until they are 2/3 cooked. I peel them and cut them into thin sticks. I season them with olive oil, lemon juice and a little dill. If you like garlic, you can mash some of it, add lemon juice and olive oil and pour this mixture over them.

How do you make carrot salad?

I prefer carrots grated on the finest grater and seasoned with olive oil and lemon juice. I might add a teaspoon of cold-pressed pumpkin seed oil.

And from the turnip?

I don't eat turnips in a salad because it makes my stomach swell a lot. Cooked with spices is more acceptable. It is grated on a large grater and stewed with a little water and spices that work well on the stomach - cumin, coriander, garlic, black pepper and half a green chili pepper. The turnip is ready in ten minutes.

How do you recommend we eat the cabbage?

It may be cooked so as not to cool us. I pour 1-2 mm of refined oil into the pot. I fry cumin seeds and add finely chopped ginger with half a clove. I lightly fry them. I add turmeric and cabbage, which must be finely chopped. Then I stir it constantly until it softens. I add half a cup of hot water, a little salt and then stew it on low heat under a lid for 8 minutes.

Does rice have a warming effect?

White rice has a cooling effect, and brown rice has a heating effect. Brown should be more suitable for winter, but it is difficult to digest and in winter, our fire is not so strong. Therefore, it is better to cook white rice. It is combined with a mix of vegetables, root vegetables, nuts and dried fruits. It is versatile. I usually cook it.

Are pickles good for you?

They are useful, but we should not take them as food, but as a supplement. They are sour, salty, hot - this improves the digestive fire. I'm talking about sauerkraut.

How to cook cauliflower?

It is highly gas-forming. It is good to stew in a little water with cumin, coriander. Turmeric, black pepper can be added. And finally add sour cream to have a warming effect. I recommend steaming or blanching the broccoli. And add fat to it - for example, olive oil with lemon juice.
